Ingredients
- 2 Tbsp of coconut oil is best but can use vegetable oil
- 1/2 cup onion
- 1/2 cup red pepper
- 2 chopped scallions
- 6 to 8 oz sliced chicken or boneless, skinless thighs
- 1 to 2 tsp Bumbu Kuning (Buy Now)
- 1/2 cup can coconut milk
- 1 tsp chicken base or other salt to taste
- pinch dried tumeric
Instructions

Heat oil in pan over medium heat

Add chicken and lightly brown on both sides. Does not need to be completelycooked because you will add back later

Take out chicken and lay aside

Add onion, red pepper, scallions in the pan

Saute 30 seconds over medium heat

Add Bumbu Kuning and stir

Add chicken base (salt) to taste

Add tumeric
-
Stir to combine all

Simmer (light boil) for 1 minute

If using thighs cut into big slices Add chicken back in the pan with all other ingredients

Let simmer for about 5 minutes on low heat to thicken sauce

Serve with your preferred side
